Frequently Asked Questions

Everything you need to know about our handcrafted charcuterie and gourmet meats.

How do you ship your perishable products?

We use insulated packaging and frozen gel packs to ensure your meats arrive at the perfect temperature. All orders are shipped via expedited carrier services to minimize time in transit.

Does your salami need to be refrigerated?

While our dry-cured salamis are shelf-stable and can be kept at room temperature, we recommend refrigerating them after opening to maintain optimal moisture and flavor profile.

What is the white powder on the outside of the salami?

That is Penicillium nalgiovense, a natural, edible mold that is essential to the traditional dry-curing process. It protects the meat from harmful bacteria and adds a distinct earthy flavor.

Do you offer international shipping?

Due to strict customs regulations regarding meat products, we currently only ship within the United States. We are unable to ship to international addresses at this time.

Are your products gluten-free and nitrate-free?

The majority of our products are gluten-free. While we use traditional curing salts (nitrates) to ensure safety and authentic color, we also offer a selection of 'ungetted' products for those seeking nitrate-free options.

What is your return policy for food items?

Due to the perishable nature of our products, we cannot accept returns. However, if your order arrives damaged or incorrect, please contact our customer service team within 24 hours for a replacement or refund.
